1½ tablespoons olive oil
2 cups sliced zucchini, cut crosswise into ¼-inch-thick slices
2 scallions, chopped
1 teaspoon minced garlic
6 large eggs
½ cup shredded cheddar cheese
1 tablespoon chopped fresh dill
1 teaspoon salt (optional)
½ teaspoon ground black pepper
¼ cup water

In large ovenproof skillet, heat oil. Add zucchini, scallions and garlic; cook until soft, about 3 minutes. Meanwhile, in medium-size bowl, whisk eggs, ¼ cup (half) of the cheese, dill, salt, pepper and water until combined. Pour egg mixture over vegetables in skillet. Stir once; cover and cook over medium heat until almost set, about 6 minutes.
Sprinkle with remaining cheese; broil 4 inches from heat until eggs are cooked through and cheese melted, about 1 minute. Serve warm or at room temperature. Garnish with dill sprig, if desired. Delicious with toasted garlic bread.
