2 cups of freshley prepared hashbrown potatoes
1 1/2 cups spinach shaved
1/4 cup of red onion diced and gentley cooked
1/4 cup diced tomatoes
1/2 cup crisp bacon diced
1 cup grated jack cheese
Place potatoes on oven safe plate . Layer ingredients on the top of hashbrowns. with cheese being the last layer and bake until golden brown. if desired, top with horseradish or sour cream .
