Ginger Beef and Vegetable Stir-Fry With Rice

1 cup instant brown rice
1 tablespoon vegetable oil
2 scallions, sliced thin
2 teaspoons minced garlic
1 tablespoon grated fresh ginger
1 teaspoon salt (optional)
1 teaspoon cornstarch
¾ to 1 pound stir-fry beef
1 red bell pepper, sliced
3 cups broccoli florets
2 cups sliced mushrooms
2 tablespoons low-sodium soy sauce
½ cup low-sodium beef broth or water

Prepare rice according to package directions. In large nonstick skillet, heat oil over medium high heat. Add scallions, garlic and ginger; cook 1 minute. Sprinkle salt and cornstarch on beef; add to skillet. Cook until browned, about 3 minutes; remove meat from pan. Add vegetables to skillet; stir-fry 1 minute. Add soy sauce and beef broth. Cover; simmer 3 minutes. Stir in cooked beef. Serve over rice or noodles.
